Lemon Blueberry Breakfast Bread Recipe
Our Lemon Blueberry Breakfast Bread is a recipe that punches way above its weight! It’s simple to make, and the best news is that you’ll probably have most of what you need!
While this recipe doesn’t require any fancy equipment, we highly recommend you read through the whole thing before you preheat your oven.
To make this morning delicacy, you need the following gadgets:
- Hand mixer
- Microplane
- Large bowl
- Small bowl
- Loaf pan
Bread Ingredients:
Gather the following ingredients to make the batter. We highly recommend keeping the wet ingredients separate from the dry ingredients. See the instructions below for more details.
- ⅓ cup softened butter
- 1 cup sugar
- 2 eggs
- Approximately 2-3 lemons (for 3 Tbs lemon juice and 2 Tbs lemon zest)
- 1 ½ cups all-purpose flour (may substitute gluten free flour like Bob’s Red Mill 1-to-1 baking flour)
- 1 tsp baking powder
- ½ tsp salt
- ½ cup milk
- 2 Tbs lemon zest
- 1 cup fresh or frozen blueberries
Glaze Ingredients:
- 2 Tbs lemon juice
- ¼ cup of powdered sugar
Instructions:
Making our Breakfast Bread is super easy as long as you follow the steps outlined below. Keep in mind that small steps like creaming your butter are easily skipped; they have an effect on the end-result.
- Preheat the oven to 350F.
- Roll your lemons on the countertop to get the juices to the surface.
- Zest the lemons directly into your softened butter.
- In a large bowl, cream the lemon zest butter and sugar until light and fluffy.
- Beat in eggs and lemon juice.
- In a smaller bowl, combine the flour, baking powder, and salt.
- Alternate adding the flour mixture and milk to the butter mixture, beating well after each addition.
- Fold in the blueberries.
- Pour the batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
- Make the glaze by mixing the powdered sugar and lemon juice. Once the bread has cooled for at least 10 minutes, add the glaze. Enjoy!
